Pumpkin Spice Smoothie Bowl

Plant-Based, Dairy-Free, Gluten-Free

The only thing better than a pumpkin spice latte is a rich pumpkin smoothie bowl. It's lower in sugar but high in flavor. This smoothie bowl is like eating a pumpkin pie for breakfast but you'll actually feel healthy afterwords! It is full of fiber, protein, vitamins, and healthy fats. Coconut yogurt gives it a creamy lightness, and toasted pecans give it a satisfying crunch.

3/4 cup canned pumpkin

1 frozen banana, chopped

1/2 cup unsweetened applesauce

1 cup almond milk (or other milk)

2 tbsp peanut butter (or other nut butter)

1 tbsp flax and/or hemp seeds

2 tbsp pumpkin seeds

1 tbsp maple syrup

4 dried dates, pitted and chopped (optional)

Pinch of pumpkin pie spice or cinnamon and ginger

Toppings: coconut yogurt, toasted pecans, granola.

Method: blend until seeds are completely dissolved (use ground seeds if blender is low power). Pour into two bowls and add toppings. Enjoy!
