Maple-Glazed SWEET Potato Smoothie Bowl

Plant-Based, Dairy-Free, Gluten-Free

I never expected to use sweet potato in a smoothie but now it's my favorite recipe so far! When I found organic canned sweet potato puree by the Farmer's Market brand, I had to give it a try. The puree gives the smoothie a luxurious buttery texture and mild sweet taste. Mixed with fall flavors of maple syrup, cinnamon, and pecans it will bring to mind all your favorite autumn memories.

Time: 15 minutes

Servings: 2

1/2 can sweet potato puree (Farmer’s Market brand organic puree is great)

1/2 cup applesauce

1 ripe banana

2 tbsp sunflower seed butter or peanut butter

1 tbsp flax seeds (tip: grind seeds beforehand in a coffee grinder if blender isn’t high powered)

1 tbsp hemp seeds

2 chopped dates

1 tbsp pure maple syrup

1 tsp cinnamon

1 cup almond milk or oat milk

Toppings: Coconut yogurt, granola, pecans, blueberries, strawberries, cacao nibs (optional).

Method: Blend all ingredients in a blender and pour into two bowls. Add toppings, slicing the strawberries if needed. You can also make the smoothie the night before and pour into single serve containers in the fridge (I’ve been doing this method on work days). Enjoy!
