Ingredients:
2 gluten-free wraps (such as Sami’s Bakery ‘Millet and Flax Spinach Lavash’)
1 can refried beans
1 avocado
Handful fresh spinach or mixed greens
1/2 cup LAVA brand original yogurt (or vegan cheese alternative)
2 tbsp olive oil
1 tbsp lemon juice
Salt and pepper to taste
Smoked paprika
Nutritional yeast seasoning (such as Bragg brand’s)
Hot sauce/tabasco sauce (optional)
Method: Mash the avocado in a bowl with the lemon and olive oil for an easy guacamole. Add salt and pepper to taste. Place the wraps on two large plates and spread the refried beans on top evenly (you can use just half the can if you don’t want to eat all of it). Place the wraps with bean layer in the oven on low heat. Warm up until the wrap is soft. Put the wraps back on the plates and divide the guacamole between them. Add a handful of spinach on top and ¼ cup LAVA yogurt on each. Sprinkle paprika, nutritional yeast and a dribble of hot sauce. Fold in half and enjoy!
