Blueberry Butter

Plant-Based, Dairy-Free, Gluten-Free

This smoothie is a thick and creamy treat that tastes somewhere between a peanut butter cup, mango lassi and a butterfinger. A perfect treat for when you're feeling indulgent but want to stick to your health goals. Fresh mango and peanut butter together give it the rich dessert flavor. I got to try out a friend’s Magic Bullet blender for this one, which gave the smoothie a beautiful marbled effect while blending. I used a single serving amount to fit in the Magic Bullet, but you can easily double the recipe for two people.

1/2 fresh mango, cubed

1/2 well-ripened banana

1/4 cup frozen blueberries

1/2 cup almond milk

2 tbsp peanut butter

2 tbsp chopped walnuts

1 tbsp flax seeds

1 tbsp pumpkin seeds

Method: blend and serve in a bowl, glass, or straight from the blender cup!
